Raise your jar and toast with me! Let's drink together! Barley, juniper, hops... These are ingredients that for generations created one of the oldest beers still consumed today. Sahti is the traditional Finnish beer, and its origin is lost in time. Its consumption is widespread throughout Scandinavia, but its heart is Finnish. It's a craft beer, which was brewed in a family way on farms. Its tradition is so strong and ancient that the Kalevala has almost 400 stanzas dedicated to the brewing of this drink. Sahti was brewed by women, and the traditional ingredients are barley, rye, juniper and wild yeasts, which over the years have been replaced by hops and baker's yeast. It's so handcrafted that it must be drunk very quickly to prevent it from spoiling, it shouldn't be kept for more than a month. Its consumption was reserved for special occasions such as parties, celebrations and gatherings. Some barrels of sahti were found in a Viking ship of the ninth century sunk off the coast of Norway. It's brewed in a kuurna (wooden trough), without boiling, using only hot stones. So no thermometers are used in the brewing process, the brewmasters take the temperature with their fingers and elbow. Sahti is served in a vessel called haarikka so that the drink can be shared. All this makes sahti beer unique and special. That is the importance of keeping tradition, that the taste of a good beer is not just a memory. May the wisdom and work of our ancestors live on!
